Sour Cream Butter..........

When I eat a baked potato, I like a lot of butter and sour cream. So in an effort to cut back on both; I made some Sour Cream Butter with lemon. Two little scoops of this is less than the amount I use of each separately. So I have achieved my goal!

Sour Cream Butter
1 stick (8 tablespoons) salted butter, room temperature
2 tablespoons sour cream
1 tsp lemon zest
Combine the butter, sour cream and lemon zest with a wooden spoon. Season with some salt and pepper.
