Summer Fun at it's Best........

Summer fun at it's best! What could be better than a picnic with friends on a nice summer's eve. There was an inflated Tigger for the children to jump in, shaded table area to enjoy all the wonderful yummy foods, a pool to cool off in and to our surprise, a hot air balloon came floating overhead. The skies were so blue and not a cloud to be seen anywhere. Can you imagine the view from the hot air balloon? It must have been spectacular! Our meal included BBQ pulled pork sandwiches, pasta salad, three different kinds of chips, cheese/jalapeno dip w/tortilla chips , 3 different kinds of cookies and all kinds of drinks. There was also a DJ playing good music. It was a perfect evening. Did I mention there was a nice breeze that held any mosquitoes at bay? Well, there was and everyone was having a great time.

Pepper Slaw.....

Yesterday I saw an ad in the paper for cabbage. It was for this season's new cabbage. I wanted to make some Pepper Slaw to put in the freezer for this winter. So I went to check out the cabbage today. Pepper Slaw is nothing more than cabbage, red peppers and onions in a sweet pickle solution. It freezes well and can be brought out as something special for a summer picnic (no mayonnaise) or for a Holiday party. It looks festive and not everyone makes it. So it is also something a bit different. I was happy to get four nice containers of it to freeze. I still have some cabbage left, so may make some more just to eat now. It keeps very well in the refrigerator as most pickled things do. That was my morning, how was yours?

I can't sleep and I am in my "jammies". So thought I would blog a bit and maybe I would get sleepy. I had a great day. I ran about five errands and all went well. I was able to get everything done and get back home by 10:30am. So fixed me a bit of breakfast and decided to get out my sketch pad and go at it. The result was a seascape I have called "Solitude". It's the kind of picture I would like to look at; if I were at the beach, just a very little breeze, sunny, a few rocks and calm waters. I decided to share it with you.
Well, I'm still not tired so will play a few games on my computer and see if that helps. Goodnight, everyone.

This Old Mill......

Sometimes you drive by something every day and all you can think of is....that would be a great photo. This old feed mill has called to me for months. Finally, I drove over to it and snapped this photo. There were trucks and cars around it, a filled dumpster and the doors were open, but no people. You had the feeling the mill had been abandoned in a hurry. It was almost a bit eerie. It was one of those things that make you say, "Hmmmm." Being as curious as I always am, I could imagine all kinds of things. I wonder what the real truth is about this mill. There I go wondering again. But that's another story for another time.

Just Driving Around

I went driving around the park today. I caught a few fishermen calling it a day. Guess the fish were done biting as it seemed they were all coming in about the same time. I watched two boats being loaded onto their trailers and two more were waiting their turn. Then I decided to move on and take a road less traveled (at least by me). I found a large family shelter with an elephant and an abstract structure for the children to climb on. So I had to snap a few photos so I could share this with you. Don't these look fun to crawl over and out of?

Cowboy Caviar

During the summer months; we are all looking for something different that can sit on the picnic table without spoiling. Cowboy Caviar is one of those dishes. It is a combination of black beans, red onions, tomatoes, corn, avocado, and cilantro. The dressing is olive oil, lime juice, red wine vinegar, salt and pepper. As you can see, it is very colorful and is very low in calories. This dish can be used as a side dish or as an appetizer with tortilla chips. It will compliment beef, fish or poultry. Most recipes on the Internet are pretty much the same. I did run across a recipe that also called for salsa to be added. That would definitely give it a bit of a "kick". This recipe I received from a friend. So next time, you are invited someplace this summer, give this Cowboy Caviar a try. I haven't included the recipe as it is all over the Internet and can easily be found. Enjoy your summer and the Caviar.

Party Time........

This is the time of year one thinks about picnics, pool parties, fiestas, carnivals and other fun things. This might include the normal carnival foods or maybe a Mexican Fiesta. Planning a Mexican Fiesta can be as simple as you want to make it or as elaborate as you would like. You might need sombreros, bright colored plates and cups, strings of chili pepper lights and I could go on forever. Don't forget great foods. You can start the Fiesta off with chilled Margeritas, several salsa dips and tortilla chips and then move on to the dinner. Traditional recipes can be found on the Internet . I almost forgot, great music is always a plus. A fiesta should bring family and friends together. It should be reasonably loud, colorful, spicy and fun. If you are having children, don't forget to have a pinata. Fill it with little goodies and candy and the children will love it! Here is a good salsa to use.

Pico De Gallo

1 lb. tomatoes, remove the seeds, dice them
1/2 cup chopped onion
1/2 cup chopped fresh cilantro
1/2 cucumber, diced
2 Jalapeno peppers, seeds removed, diced
1 Tbsp. fresh lime juice
1 garlic clove, minced
Mix everything together. Wash your hands good with soap after touching Jalapenos as they can burn your eyes. Put in refrigerator for several hours and serve with tortilla chips. You can always cut back on the Jalapenos or use green pepper if you don't want the heat.

White Peach Jam

The treasures of summer are starting to arrive. This is my first batch of white peach jam. I added a little red food coloring to help it along; as it does not have much color otherwise. I also put enough white peaches in the freezer for another batch later on. I have several bags of rhubarb in the freezer to make jam when the weather cools off a bit. The larger quart jar is some apple cinnamon jelly that did not gel. So I reheated it and added some sure-jell to it and hopefully that will take care of it. If not, apple cinnamon syrup is always good on waffles. It won't go to waste, that's for sure.

Two By Two ........

Once in a while, Mother Nature lets you share something special. My daughter and I have been privileged to see two baby mourning doves in her side garden; yesterday and today. She has lots of gardens and all of them are planned to attract the birds. As you can see this one is decorated with a piece of driftwood, flowers and an obos. It is also a bit secluded and perfect for baby birds. Mother bird is not far away; keeping a watchful eye on them. Nature is so inspiring. Take time to enjoy Mother Nature and what she has to offer us. You truly will not be disappointed.

Happy Birthday to You!

Today I helped a friend celebrate her birthday. Five of us went to lunch at Ruby Tuesday's and had a delicious salad bar for lunch. You could make it a combo and add 2 mini crab cakes to it. Since I love seafood, I did just that. When they arrived, it was a complete meal. So needless to say one crab cake and the french fries came home with me. It sure tasted good for supper this evening. After lunch, we played cards for a while and the hostess served a lovely Tiramisu to us. It was amazing. Such a fun day! Happy Birthday, M. and many more Happy Birthdays.
