Bounty

This is the time of year that fresh tomatoes are in abundance. So you have to be creative about how you can save these wonderful treasures of summertime. We have frozen some, we have canned some and now we are going to try drying some. They will be stored in a sealed canning jar after they are dried and then re-hydrated when we are ready to use them. Dried tomatoes will keep a year in a pantry or 18 months in a freezer. Have I done this before? No, but I am always ready to try something new; especially, if it can save me some money on the grocery bill and not waste the bounty of summer. It sounds simple enough.
